                                                                                        BLUEBERRY
                                                                                        MUFFINS


                                                                                        Savor these healthy and delicious
                                                                                        blueberry muffins, perfect for a
                                                                                        hearty breakfast or a healthy snack!


                                                                                        INGREDIENTS:
                                                                                        1/2 cup oil
                                                                                        1/2 cup honey
                                                                                        1 egg
                                                                                        1 1/4 cups Wondermills flour
                                                                                        1/2 tsp vanilla extract
                                                                                        1/3 cup oats
                                                                                        2 1/4 tsp baking powder
                                                                                        1 tsp cinnamon
                                                                                        Juice of an orange (or 1/4 cup
                                                                                        orange juice)
                                                                                        1 cup blueberries
                                                                                        1 tbsp oats for topping


                                                                                        DIRECTIONS:
                                                                                        Preheat oven to 350 degrees.
                                                                                        In a bowl, mix well all the wet
                                                                                        ingredients.
                                                                                        Add the oats, cinnamon, flour,
                                                                                        and baking powder, and mix until
                                                                                        fully combined.
                                                                                        Add the blueberries to the batter
                                                                                        and stir gently.
                                                                                        Pour the batter into muffin pans,
                                                                                        filling each cup about 3/4 full.
                                                                                        Sprinkle some oats on the top of
                                                                                        each muffin.
                                                                                        Bake for 15-18 minutes.
